Apple-Onion Vinaigrette and Salad
(From Jean in Southern U.S. Cuisine Forum)
Ingredients
2 large apples, grated fine
1 cup apple cider vinegar
1 cup sugar
1/2 cup olive oil
2 teaspoons grated red onion
1 teaspoon salt
1 teaspoon ground mustard
1/2 teaspoon garlic powder
1/4 teaspoon cayenne powder
Directions
Finely grate apples and red onion. Mix all and shake.
(I use fresh garlic and mix everything but oil in the blender. After grating and blending, I add the oil.)
Mix dressing with salad made of these ingredients:
Romaine lettuce
Red leaf lettuce
Sliced mushrooms
Sliced strawberries
Thin red onion slices
Note from Jean: This is a great salad recipe!!! A lady at our church had a dinner for those of us who cook the Wed. night church supper. She served this salad, and we all just loved it! I also use the dressing as a sauce for chicken or to pour over veggies!
