Apple Pecan Stuffing
(From The Detroit Free Press Foods Section)
Ingredients
Nonstick cooking spray
4-1/2 cups white bread (about 5 slices), cubed
4-1/2 cups whole wheat bread (about 5 slices), cubed
1 tablespoon margarine
1-1/2 cups finely chopped celery
1 cup chopped onion
1 teaspoon poultry seasoning
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup fat-free, reduced-sodium chicken broth
3 cups peeled and finely chopped apples
1/4 cup pecans, toasted and chopped
Directions
Spray a 2-1/2 quart oven-safe casserole dish with cooking spray. Preheat the oven to 350.
Place all the bread cubes on a large baking sheet and bake until slightly golden, about 15 minutes. Transfer the toasted bread cubes to a large bowl and allow them to cool.
In a large skillet over medium-high heat, melt the margarine. Add the celery and onion and cook until tender, stirring occasionally.
Remove the skillet from the heat. Stir in the poultry seasoning, salt, pepper and chicken broth. Add the mixture to the bread cubes, along with the apples and pecans. Toss well.
Place the stuffing in the casserole dish, cover and bake 25 minutes. Remove the cover and bake an additional 20 minutes. Remove from the oven and serve.
