Arkansas Derby Pie

(This fabulous pie is served at The Great Southern Hotel in Brinkley, Arkansas. The hotel has a reputation for a homelike atmosphere with Southern cuisine served in the Victorian Tea Room)

Ingredients

3 eggs

3/4 cup sugar

1 cup dark corn syrup

1 tablespoon melted butter

2 tablespoons Southern Comfort

1 teaspoon vanilla extract

1/4 cup coconut

1/2 cup semisweet chocolate chips

1/2 cup pecans

Pinch of salt

Unbaked 9-inch pie shell

Directions

Beat the eggs slightly with an electric mixer; add the sugar and mix well.

Add the corn syrup and mix well; then add the butter, Southern Comfort, vanilla, coconut, chocolate chips, pecans, and salt.

Mix well and pour into the unbaked pie shell.

Bake at 375 degrees for 45 minutes.

Serves 6 to 8
