BARBEQUED HAM STEAK
INGREDIENTS

cup ketchup
1/4
cup vinegar
2
tsp. Worcestershire sauce
1/4
tsp. hot pepper sauce, or to taste
2
Tbsp. prepared mustard
1/4
cup molasses OR dark brown sugar (packed)
1/2
tsp. salt
2
center-cut fully cooked ham steaks, 1-inch thick (each steak serves
2 people)
DIRECECTIONS
To
prepare the Sauce, combine all ingredients down through the salt, in
a 2-quart saucepan and simmer, unconvered, over medium heat for 15
minutes. Set aside until you're ready to barbecue.
To
barbecue the ham, get rid of the excess salt and fat by placing the
steaks in a large skillet in water and cover. Parboil them over
medium-high heat for about 5 minutes. Pour off the water. Remove the
ham steaks from the skillet and pat them dry with a paper towel.(This
step is necessary ONLY if you use country ham.)
Place
the steaks in a large roasting pan and pour the sauce over them.
Marinate the ham in the sauce for 20 minutes at room temperature.
Remove
the steaks from the pan, reserving the marinade sauce. With a sharp
knife, cut slashes in the fat around the edges of the steaks, to
prevent their curling during grilling.
When
the fire in the grill is ready, grease the rack with a small piece
of the ham fat and position it 3 to 4 inches above the heat source.
Place the ham steaks on the grill. Baste with the marinade and turn
frequently as they cook. The steaks will be done in 25 to 30 minutes.
YIELD: 1 1/4 cups sauce
