Beef And Sweet Potato Stew
Ingredients
2 teaspoons Olive oil
1 pound stew meat, cubed
1 medium onion, diced
2 stalks celery, diced
1 teaspoon garlic, minced
1 cup mushrooms, quartered
1 tablespoon flour
2 cups beef broth
2 cups chicken broth
1 1/2 cups sweet potatoes, large diced
2 1/2 teaspoon cumin, ground
1 cup tomatoes, diced
Salt and pepper to taste
Directions
Heat the oil in a large soup pot. Add the beef and brown. Add the onions and celery. Cook until just soft.
Add the garlic and mushrooms. Cook for 2 minutes longer.
Sprinkle on the flour and cook for 3 minutes (stirring frequently).
Whisk in the broths.
Add the remaining ingredients, bring to a boil and reduce the heat.
Simmer for 1 1/2 hours (or until the beef is tender).
Serve warm.
Serves 4-6
