Beef Teriyaki
Ingredients for Teriyaki Sauce:
1/2 cup soy sauce
1/2 cup oil
1/4 cup dry sherry
2 cloves of garlic minced
2 tablespoons grated or minced fresh ginger
Zest of 1/2 lemon, grated
1 1/2 teaspoons rice wine vinegar
1/4 teaspoon freshly ground pepper
Ingredients for Kabobs
3 1/2 lbs. Boston Broil steaks, trimmed and cubed into 1"
pieces
1 large red pepper cut into 1" pieces
1 large yellow bell pepper cut in 1" pieces
1 large green pepper cut into 1" pieces
1 large onion cut into 1" pieces
Directions
Soak bamboo skewers in hot water for 2 to 3 hours or use
metal skewers. Prepare the teriyaki sauce by combining the
soy sauce, oil, sherry, garlic, ginger, lemon zest, vinegar,
and black pepper.
Thread beef cubes alternately with red, yellow, and green
peppers and onion on a skewer. Start and end with a cube of
beef. Place the skewers on a flat non-reactive dish and pour
teriyaki sauce over them.
Marinate from 1 to 2 hours (vegetables will discolour if left in the marinade too long).
Preheat the grill to medium.
Remove the skewers from the marinade and discard the marinade.
Grill 3-4 minutes, turning often to brown all sides, or cook to personal preference.
Makes about 6 - 8 servings.
