Butterscotch Pie
Ingredients
3/4 cup brown sugar
1/3 cup flour or 3 tbsp cornstarch
1/4 teaspoon salt
2 cups milk
3 slightly beaten egg yolks
2 tablespoon butter
1 teaspoonp vanilla
1 (9-inch) baked pastry shell
Meringue (see recipe below)
Directions
In saucepan, combine sugar, flour, and salt.
Gradually stir in milk.
Cook and stir over medium heat until mixture boils.
Cook 2 minutes longer and remove from heat.
Stir small amount of hot mixture into yolks and return to hot mixture.
Cook and stir 2 minutes.
Remove from heat.
Add butter and vanilla.
Cool to room temperature.
Pour into pastry shell.
Seal pie filling with meringue (recipe below).
Bake at 350 degrees for 12 to 15 minutes
Cool.
Meringue Ingredients
3 egg whites
1/2 teaspoon vanilla
1/4 teaspoons cream of tartar
6 tablespoonssugar
Meringue Directions
Beat the egg whites with the vanilla cream of tartar until soft peaks form.
Gradually add sugar, beating to stiff peaks.
Spread over pie filling, sealing the pastry.
Bake at 350 degrees about 12-15 minutes.
Cool pie before serving.
