Café Creosote's Breakfast Chilaquiles

Ingredients

12 corn tortillas, dry, cut into wedges

For the Tomato Sauce:

1 tablespoon vegetable oil

1 1/4 cups diced onions

¼ cup finely chopped jalapeno peppers

4 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon chili powder

4 cups diced tomatoes, with juice

1 cup chicken stock or canned chicken broth

Salt and pepper to taste

To assemble the chilaquiles:

2 teaspoons vegetable oil

1/2 cup diced onion

1/4 cup chopped cilantro

1 tablespoon finely chopped jalapeno pepper

Salt and pepper to taste

3/4 cup shredded Cheddar cheese

3/4 cup shredded Monterey jack cheese

8 eggs, poached or fried

Chopped scallions, for garnish

Fresh cilantro sprigs, for garnish

Directions

1) Place tortilla wedges on a tray to dry.

2) For the Tomato Sauce: Heat oil in a large saucepan over medium heat.

Add onions and cook 5-7 minutes, stirring frequently. Stir in jalapeno

peppers, garlic, cumin and chile powder and cook, stirring occasionally,

10 minutes.

3) Add diced tomatoes and chicken stock. Bring to a simmer and reduce

heat. Simmer, uncovered, for 25 minutes. Season with salt and pepper to

taste. Cool and puree; set aside.

4) To assemble: Preheat oven to 350 degrees F. In an ovenproof skillet

heat vegetable oil; add onion and cook until translucent. Stir in cilantro

and jalapeno pepper and cook 3 minutes. Stir in reserved tomato sauce,

bring to a simmer, add tortilla wedges and turn off heat (make sure

tortillas are well coated with sauce and are evenly distributed).

Top mixture with shredded cheeses. Cover with aluminum foil and bake 30

minutes. To serve, divide chilaquiles among serving plates, top each

serving with a poached or fried egg, and garnish with scallions and

cilantro sprigs.
