PORK CHOPS WITH APPLES AND RAISINS

My Mother's Southern Kitchen)
INGREDIENTS
3 slices bacon
6 large loin pork chops
Salt and black pepper to taste
3 apples, cored, peeled, and coarsely chopped
1/3 cup firmly packed light brown sugar
2 Tbsps. all-purpose flour
1 Cup water
1 Tbsp. cider vinegar
1/4 tsp. dried sage
1/2
cup seedless raisins
DIRECTIONS
In a large, heavy skillet, fry the bacon till crisp; drain on paper towels, and crumble well.
In
batches, brown the pork chops on both sides in the bacon fat,
adding
a little vegetable oil if necessary.
Arrange the chops in a large baking dish and season with salt and pepper.
Divided the chopped apples equally over them and sprinkle with the brown sugar.
Preheat the oven to 350 degrees
Add the flour to the fat in the skillet and stir over moderate heat for 1 minute.
Add the water, vinegar, and sage to the skillet.
Cook until thickened, stirring continually.
Add the raisins and crumbled bacon to the skillet mixture.
Pour the mixture over and around the chops, cover with aluminum foil, and bake 1 hour.
