EASY SWISS STEAK

        INGREDIENTS

        1/4 cup flour

        1/2 tsp. salt

        1/2 tsp lemon pepper

        1 1/4 lbs. cube steak, cut into strips

        olive oil

        1 large onion, cut in half and thinly sliced

        1 green bell pepper, cut into 1-inch pieces

        2 (11.5-oz.) cans tomato juice

        Hot cooked rice

        DIRECTIONS

        Combine first 3 ingredients and dredge steak in this mixture.

        Pour oil to a depth of 1 inch into a large heavy skillet.

        Cook steak in hot oil, in batches, over medium-high heat for 1 to 2 minutes on each side or until golden brown.

        Remove meat from skillet, and set aside, reserving 1 tsp. oil in skillet.

        Add onion and bell pepper; then saute in hot oil until tender.

        Stir in tomato juice and bring mixture to a boil.

        Cover, reduce heat, and simmer 30 minutes.

        Add steak strips to skillet and cook 10 minutes more.

        Serve with hot cooked rice.
