OLD FASHIONED EGGNOG
INGREDIENTS
4
cups sugar
24
egg yolks
2
tsp. Salt
2
1/2 gal. Whole milk
24
egg whites
2
cups sugar
4
Tbsp. Vanilla
3
pints whipping cream (chilled and very cold)
Nutmeg
to taste
Bacardi
Rum to taste
DIRECTIONS
Beat
4 cups sugar into egg yolks and add salt.
Stir
in milk.
Cook
over medium heat, stirring constantly, until mixture coats spoon. Cool.
Beat
egg whites in separate pan until foamy. Gradually add additional 2
cups sugar to whites, beating to soft, shiny peaks.
Add
beaten egg whites to other mixture and mix thoroughly.
Whip
cream to soft peaks and add to eggnog, mixing thoroughly.
Add
nutmeg to taste, mixing in well.
Refrigerate
and serve chilled.
Rum
can be added just prior to serving.
