Fluffy Vanilla Frosting
Ingredients
1-1/2 cups granulated sugar
1/2 teaspoon cream of tartar
1/2 teaspoon salt
1/2 cup water
1-1/2 Tablespoons light corn syrup
2 egg whites (See storing leftover egg yolks.)
1-1/2 teaspoons pure vanilla extract
Directions
Place 1-1/2 cups granulated sugar, 1/2 teaspoon cream of tartar, 1/2 teaspoon salt, 1/2 cup water, and 1-1/2 Tablespoons light corn syrup in a saucepan. Stir over medium heat until the sugar is completely dissolved, forming a syrup.
Whip 2 egg whites just until they to hold shape, about 45 seconds at maximum speed (#10). Continue whipping while slowly pouring hot syrup in a fine stream into egg whites, about 1 to 1-1/2 minutes. Add 1-1/2 teaspoons pure vanilla extract and continue whipping for another 5 minutes, or until frosting loses gloss and stands in stiff peaks.
Frost cake immediately
