HELEN'S MEXICAN CORNBREAD
INGREDIENTS
1 lb. ground beef
1 large onion
1/2 lb. grated cheddar cheese
4 chopped (canned) jalapeno peppers
1 cup yellow cornmeal
1 cup milk
3/4 teaspoon salt
1/3 cup bacon drippings
2 eggs
1/2 teaspoon baking soda
1 can cream style corn
DIRECTIONS
Brown ground beef, drain well, and set aside.
Grate 1/2 lb. of cheddar cheese and set aside.
Dice onion and set aside.
Seed and finely dice jalapeno peppers
and set aside.
Mix last 7 ingredients together and set aside.
In a large baking pan/dish, sprinkle a
very thin layer of cornmeal and brown slightly.
Pour 1/2 batter into baking dish.
In the following order, add meat,
cheese, onions, and jalapeno peppers to the batter. Pour the
remaining 1/2 batter over the top.
Bake for 55 min. to 1 hour at 350 degrees.
