(This
dish from Kentucky's Brown Hotel is a great way to use leftover turkey.)
Ingredients
4 slices Bread, toasted
1 pound Turkey, white meat, sliced
8 slices Tomato
8 slices Bacon, cooked
Sauce:
3 cups Half and Half
1/2 cup Chicken broth
1 1/2 cup Swiss cheese, grated
Cornstarch
Directions
Heat the half and half with the chicken broth in a medium saucepan over low heat until steaming. Slowly whisk in the cheese until smooth. Simmer for 20 minutes, stirring frequently. Mix together about 1 tablespoon of cornstarch and a little water. Whisk into the sauce (add small amounts if necessary to achieve a medium-thick sauce).
Quarter one piece of toast and place it in an individual oven-ready dish. Top with 1/4-pound of the turkey, 2 tomato slices, and 1/4 of the sauce. Repeat with the other 3 servings. Bake at 375 for about 12 minutes, or until the sauce begins to bubble. Garnish with the bacon and serve hot.
