Hot Brown
(Hot Brown is a famous open-faced sandwich that was created at the
Brown Hotel in Louisville, Kentucky)
Ingredients
1/4 cup butter or margarine
1/4 cup all-purpose flour
1 cup milk
1 cup chicken broth
1 cup (4 ounces) shredded Cheddar cheese
1/4 teaspoon salt
8 slices bread, toasted
1 pound sliced cooked turkey or chicken breast
8 slices bacon, cooked and drained
4 slices tomato
1/2 grated Parmesan cheese
Directions
Melt butter in saucepan over low heat; add flour, stirring until smooth. Cook 1 minute, stirring constantly.
Gradually add milk and broth; cook over medium heat, stirring constantly, until thick and bubbly.
Stir in Cheddar cheese and salt, and continue stirring until cheese melts. Remove from heat.
Cut 4 slices of toast in half diagonally.
Place 2 halves, cut side in, with 1 whole slice in center, with one whole slice in center, on an oven-proof plate or a 15 x 10-inch jellyroll pan. Repeat with remaining toast.
Top each with turkey, cheese sauce, 2 slices of bacon criss-crossed, a tomato slice, and 2 tablespoons Parmesan cheese.
Broil 3 inches from heat for 2 to 3 minutes or just until bubbly.
Serve hot.
Makes 4 servings.
