Hot Pepper Quesadillas

Ingredients

2 large 10-inch flour tortillas

1-1/2 cups (6 ounces) shredded jalapeno cheese or "Mexican" cheese

1 cup minced red onion

1/3 cup canned, drained jalapeno slices (in the condiment section of the market)

1/4 cup black olives, pitted and sliced

1 cup shredded fresh spinach

Directions

Preheat oven to 425 degrees

On a pizza pan or cookie sheet, place one tortilla. Sprinkle with half the cheese and all of the onion, jalapeno, olives, and spinach. Top with other tortilla. Sprinkle remaining cheese. Bake 8-10 minutes until cheese is melted and browned.

Let cool 5 minutes. Cut into 8 wedges and serve warm. Garnish with salsa, sour cream, minced onions, chopped cilantro, avacado slices or guacamole
