Huguenot Tort

Sandy's Note: This fabulous dessert recipe came from my dear friend, Cheryl, in Hot Springs, Arkansas. Cheryl says the recipe originally came to her from the Carolina Low Country, and combines a marvelous apple-nut, sweet, tantalizing flavor that I wake up thinking about entirely too often. Quick and easy too!
Ingredients
4 eggs
3 cups sugar
8 tablespoons all-purpose flour
5 teaspoons baking powder
2 teaspoons vanilla
1/4 teaspoon salt
1 cup chopped pecans
2 cups apples, peeled and finely chopped (2 very large red delicious will make about 2 cups)
Directions
Mix eggs until frothy and lemon-colored.
Add the rest of the ingredients, mixing well after each addition.
Turn into greased 9 x 12" baking dish and bake at 325 degrees for 45 minutes. (glass baking dish works best)
Serve warm with whipped cream.
