Italian Cauliflower
(From Little Rock Cooks... Recipes Handed Down from Generation to Generation)
Ingredients
1 head cauliflower or 2 packages frozen cauliflower
Boiling water
4 tablespoons olive oil
1/4 clove garlic, minced
1/2 teaspoon salt
1 cup chopped, peeled tomatoes
1/4 cup Parmesan cheese
Chopped parsley
Directions
Cook cauliflower in small amount of boiling water, covered, for 10 minutes.
Heat oil in skillet; sauté garlic, add tomatoes, salt and well-drained cauliflower.
Sprinkle with Parmesan cheese. Garnish with chopped parsley when served.
Serves 4
