Jerry's Polish Casserole
Sandy's Note: Although my hubby is Polish, I fix this dish more for me than for him. It's scrumptious!
Ingredients
1 pound Kielbasa
1-1/2 pounds mix of red and green bell peppers, cut into 1-inch squares
1 large onion, cut into 1-inch pieces
1 pound new potatoes, washed, scrubbed, unpeeled, and cut into 1-inch cubes
3-4 tablespoons olive oil
1/2 teaspoon Lawrey's Seasoning
1/4 teaspoon salt
1/8 teaspoon pepper
Directions
Preheat oven to 400 degrees.
In a large saucepan, bring water to a boil. Prick the Kielbasa all over and parboil for 5 minutes in the boiling water (to remove excess fat). Remove sausage from water and cut into smaller portions.
Wash, stem, core and seed bell peppers and cut into 1-inch pieces.
Cut onion into 1-inch pieces.
Cut the potatoes into 1-inch cubes.
Put the veggies in a shallow casserole dish large enough to hold all the ingredients.
Drizzle the olive oil over the veggies and toss them to coat evently. Sprinkle the veggies evenly with Lawrey's Seasoning, salt, and pepper, and place the sausage pieces over the top.
Bake for 30 to 35 minutes, stirring several times during baking until the potatoes are fork-tender and the sausage is cooked thoroughly.
Remove from oven and serve.
Serves 4
