MAMA'S TACO SOUP
Ingredients
2
pounds ground chuck
1
medium onion, diced
1/2
red bell pepper, diced
1
can Rotel tomatoes with green chilies, undrained
2
cans stewed tomatoes, undrained
1
can Ranch Style beans, undrained
1
package dry Ranch Style dressing mix
1
package taco seasoning
1
tablespoon diced bottled garlic
1/2
cup water (more if needed for thinner consistency)
1-1/2
cups tomato juice
Cheddar
Cheese (for garnish)
Tortilla
Chips
Directions
Brown
ground chuck and onion; drain off grease.
Add
all other ingredients without draining any juices from cans and mix together.
Simmer
over medium to low heat for 1 hour.
Note: I brown my beef, drain it in a colander and put it in a large crockpot. Then I add all the other ingredients and cook it on medium for 2-4 hours.
Serve with shredded Ceddar Cheese and crushed tortilla chips on top.
