MARINADE FOR PORK LOIN OR ROAST
INGREDIENTS
1/2
cup soy sauce
1/4
cup dark beer
2
tablespoons dark molasses
2
teaspoons lemon zest
2
teaspoons orange zest
1
tablespoon fresh thyme, finely chopped
2
tablespoons freshly grated ginger
2
garlic cloves, peeled, finely diced
2
tablespoons light brown sugar
1/2
teaspoon pepper
1
tablespoon salt
DIRECTIONS
Preheat
oven to 400 degrees.
In
a small bowl or glass measure, combine all the marinade ingredients.
Place
a pork roast or pork loin in a baking dish and cover with the
marinade. Refrigerate for 24 hours.
Remove
the pork from the marinade and place in a baking dish.
Place
in oven, cover, and cook for 1 hour or until cooked to about 155
degrees (using meat thermometer).
