Old Fashioned Apple Cake
Ingredients
7 apples, peeled and sliced (recipe calls for Macintosh)
2 cups flour
1 teasspoon salt
1 cup butter or margarine
1/4 cup warm water
1 teaspoon sugar
1 package yeast
2 egg yolks
1/2 cup tapioca
3/4 cup sugar
1 teaspoon cinnamon
Directions
Put flour and salt in a large bowl. Cut in butter as for pie crust.
Put warm water and sugar in a small bowl: add yeast. Let dissolve.
Add slightly beaten egg yolks to yeast mixture, then add to flour mixture and gently mix until mixture forms a ball.
Divide in half. Use one-half for bottom and one-half for top crust.
Roll out one crust to fit a 9x13-inch pan (half way up sides).
Strew tapioca over crust evenly. Fill with apples, pile high.
Mix sugar and cinnamon together. Sprinkle apples with sugar cinnamon mixture.
Roll out top crust to fit over apples. Seal ends around pan, tucking top under (do not flute). Do not prick top.
Bake at 350 degrees for 45 minutes.
While slightly warm, frost with butter frosting. Cut in large squares.
