Peachy Pork Picante
(From Southern U.S. Cuisine)

 

Ingredients

1 pound bonless pork, cut into 3/4" cubes

2 teaspoons vegetable oil

1 packet taco seasoning

1/3 cup peach preserves

8 ounces chunky salsa or picante sauce

cooked rice

 

Directions

Coat pork cubes with taco seasoning.

Heat oil in large nonstick skillet over med heat. Add pork and cook until lightly browned.

Add salsa and preserves. Lower heat and simmer for 15-20 min.

Serve over rice

Note: If you like a lot of sauce for the rice, double the salsa and preserves.
