Pork Roast with Garlic & Horseradish
Ingredients
2 pound pork loin roast
1/2 cup dry white wine
2 tablespoons olive oil
3 tablespoons horseradish
2 tablespoons Dijon mustard
1 tablespoon honey
3 garlic cloves, minced
1/2 teaspoon onion powder
1/2 teaspoon black pepper
2 tablespoons cornstarch
1 tablespoon water
Directions
Combine wine, oil, horseradish, mustard, honey, garlic, onion powder & pepper. Add to roast in marinating container or plastic bag. Refrigerate overnight or for 8 hours. Reserve marinade.
Place meat on rack in roaster and roast uncovered for 1-1/2 hours at 325 degrees or until meat thermometer reads 160 degrees.
Drain roast juices into a small saucepan to which you will add the reserved marinade. In a separate small container, mix cornstarch with 1 tablespoon water and add to saucepan. Cook on medium heat until thickened. Serve this sauce with the sliced roast.
