Potato Casserole

Ingredients
8 cups potatoes; cubed and boiled
1 can cream of mushroom soup
1 8 oz sour cream
1 8 oz pkg cream cheese
1/2 cup bell pepper; finely chopped
1/2 cup onion; finely chopped
salt and pepper; to taste
1 to 2 cups cheddar cheese; shredded
Directions
Cut pototoes into small cubes and boil with salt and pepper to taste.
In medium saucepan combine soup, sour cream, cream cheese, bell pepper, and onion; cook on low until melted and creamy.
Combine potatoes and soup mixture and spread evenly in casserole dish. Top with grated cheddar cheese.
Bake at 375 for 30 minutes or until top just begins to brown.
Note: You can substitute country-style hash browns instead of fresh potatoes. Also, leftover ham makes a great addition to the casserole
