HOLIDAY RUM FRUIT CAKE

        (I used to make fun of fruit cake until I ate this. I've never tasted anything like it before or since. Delicious!)
         
        INGREDIENTS
        2 lb. big fruit gum drops
        1 cup sugar
        1 cup butter or margarine
        2 eggs (well beaten)
        1 1/2 cup apple sauce
        1 lb. Light raisins
        1 1/2 cup chopped nuts
        1 tsp. Cinnamon
        1 tsp. Cloves
        1 tsp. Soda
        1 tsp. Salt
        4 cups flour
        Barcardi Rum
         
        DIRECTIONS
        Cream butter and sugar.
        ADD applesauce and 2 cups sifted flour.
        ADD spices and salt
        SIFT remaining 2 cups flour over raisins and gumdrops and mix well.
        ADD to creamed mixture.
        Grease pans and line with wax paper
        BAKE 2 hours at 300 degrees
        Cool on rack thoroughly
        Wrap in cheesecloth heavily soaked in Rum and then in foil.
        Cakes should remain in the Barcardi rum-soaked cheesecloth and foil for at least 2-3 weeks before serving.
         

        Makes four medium fruit cakes
