Sandy's Baked Potato Casserole
Ingredients
8 medium potatoes
1/2 pound lean bacon
1/2 cup chopped Vidalia onion (or other sweet variety)
1/4 cup thinly sliced celery
1 cup Hellmann's mayonnaise (do not use Miracle Whip)
1 pound processed American cheese, cubed
1/4 teaspoon garlic powder
a couple of dashes of your favorite hot sauce
salt and pepper to taste
Directions
Preheat oven to 350 degrees.
Add scrubbed, whole, unpeeled, potatoes to large pot of boiling,
salted water.
Boil for 20 minutes, or until tender when pierced with a fork. Remove
potatoes from the water and set aside to cool.
When potatoes are cool enough to handle, peel and cube them, and
transfer to a large bowl.
Fry bacon in a large, deep skillet, over medium high heat until
evenly brown. Drain, crumble and set aside.
Add the onion, celery, mayonnaise, cheese, garlic powder, hot sauce,
and salt and pepper to the cubed potatoes.
Mix all ingredients together well.
Place mixture in a lightly oiled 9x11 inch baking dish. Top with the
crumbled bacon. Bake uncovered for 40 minutes.
