Sandy's Baked Tomatoes
(Jerry and I plant several tomato plants each summer and have an abundance of tomatoes for friends, neighbors, and ourselves. This is a great recipe for using tomatoes when they are coming on the vine faster than you can give them away.)
Ingredients
4 medium to large tomatoes
2/3 cup dry bread crumbs
1 teaspoon dried basil leaves
1/2 teaspoon dried oregano leaves
1/2 teaspoon salt
1/4 teaspoon pepper (freshly ground pepper is best)
1 garlic clove, minced
2 tablespoons Olive oil
1/2 cup shredded Romano or Cheddar cheese
Directions
Preheat oven to 375 degrees.
Cut off stems and a thin slice from bottom of each tomato.
Cut each tomato in half crosswise.
Place each tomato half in a shallow casserole with the cut-side up.
In small bowl, combine bread crumbs, basil, oregano, salt, pepper, and garlic.
Add olive oil and stir.
Spoon evenly over tomatoes. Bake 10 minutes.
Sprinkle grated cheese over each tomato and bake 5 more minutes or until cheese is melted.
Serves 8
