Sandy's Basic Cheese Sauce
Ingredients
6 tablespoons butter
6 tablespoons flour
2-1/2 cups whipping cream
2 teaspoons dry mustard
2 cups grated sharp cheddar or jack cheese
1 tablespoon sherry
1/2 teaspoon garlic powder
salt and pepper
Directions
Combine flour and butter in heavy saucepan. Cook on medium-high for a couple of minutes. Be sure and do NOT boil the cream -- you just want it good and hot. Now, gradually stir the cream into the flour and butter. Next, stir in mustard, cheese, sherry, garlic powder, salt, and pepper. Adjust for desired consistency. If too thick, add just a tiny bit more cream; if too thin, let mixture cool and then whisk in teaspoon more flour. Reheat and stir continuously until it reaches desired consistency.
Use over broccoli, cauliflower, or anything you need a cheese sauce for.
