Sandy's Congealed Sunshine Salad
Ingredients
Note: Grated carrots are typically found in Sunshine Salad. My grandmother and my mother always put carrots in. But I don't like carrots in jello salad, so I omit them. I've never had a complaint over their omission yet!)
Ingredients
1 (3-ounce) package lemon-flavored Jell-O
1 cup boiling water
Cold water (when added to reserved juices, totals 1 cup)
1 (9-ounce) can crushed pineapple, drained and juice reserved
1 can mandarin oranges, drained and juice reserved
1 (8-ounce) carton sour cream
1 teaspoon honey
1/2 cup chopped pecans
1/2 cup grated carrots (optional)
Mayonnaise for garnish
Directions
In a large bowl, dissolve the Jell-O into 1 cup of boiling water. Add enough cold water to the pineapple and mandarin orange juice to make 1 cup, and add. Stir in the sour cream, honey, and pecans (carrots are optional). Mix well. Refrigerate for at least 2 hours, until well set. Garnish top of servings with generous dab of mayonnaise.
Makes 4-6 servings
