Sandy's Egg Salad
Ingredients
12 eggs, hard-boiled
2 tablespoons pimentos, finely diced (optional)
1/4 cup tablespoons chopped onion, finely diced
1/4 cup sweet pickle relish
1 cup Hellmann's mayonnaise
1 teaspoon horseradish
1/2 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon pepper
Directions
Hard-boil eggs. Run cold water over them for a couple of minutes and peel. As soon as the eggs are cool, finely chop and mix with all ingredients in a medium bowl. Add additional seasoning to suit your taste.
Spread on bread or toast for sandwiches, or serve as stuffing inside tomatoes, or great as a dip with crackers.
