Sandy's Layered Hamburger Casserole
(I've always fixed this in my electric skillet, but you can also
assemble it in a 9 x 13-inch baking dish and bake it in the oven at
350 degrees for 1 hour)
Ingredients
2 pounds raw hamburger, divided for layering
1 small onion, chopped, divided for layering
20 ounces uncooked noodles, divided for layering
2 (10-ounce) packages of your favorite frozen mixed veggies, one for each layering
1 (16-ounce) can whole tomatoes, including the juice (cut up), divided for layering
2 (10-ounce) cans undiluted celery soup, one for each layering
10 ounces water, divided for layering
8 ounces of tomato or V-8 juice, divided for layering
1 teaspoon garlic salt, divided for layering
1/4 teaspoon freshly ground pepper, divided for layering
2 cups cheddar cheese, divided for layering.
Directions
Divide in half the following ingredients: hamburger, chopped onion, noodles, whole tomatoes with juice, as well as the garlic salt, pepper, and cheese.
In a large electric skillet, starting with the hamburger, layer all ingredients in order as they are given, and repeat layering a second time. (Use one package of mixed veggies per layer. Spread the undiluted soup with a spatula for each layering process.
Cover and cook very slowly (low) for 2 hours.
Sandy's Note: The first time you make this, you will be able to determine whether it needs more liquid while it's cooking. If so, just add a bit more water and note that on your recipe for the next time. This is a great meal-in-one that has always been popular fare at my house. Add some French or Italian bread, and you have a great meal.
