Sandy's White Bean Soup
Ingredients
1 pound dry navy beans
3 quarts water
1 ham bone or hock, smoked
2 tablespoons parsley, chopped
1 cup onions, finely chopped
2 garlic cloves, finely minced
2 cups celery, finely chopped
1-1/2 teaspoon salt
1/2 teaspoon pepper
2 dashes of hot sauce
Directions
Cover beans with water in large pot or soup kettle and soak overnight.
Rinse beans well and put in crockpot with ham bone and 3 quarts of water, parsley, onions, garlic, celery and tops, salt and pepper, and hot sauce.
Cook on low for 6 hours, or until beans are tender. (Note: I like them almost mushy)
Remove ham bone, dice the meat from bone and add to soup.
