Sour Cream Apple Pie
(Adapted by Sandy from Mom's Recipe Box)
Ingredients
1 cup sour cream
1 egg, lightly beaten
2 tablespoons flour
3/4 cup to 1 cup sugar (I prefer the full cup)
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 teaspoon vanilla
6 medium cooking apples, peeled and thinly sliced
9-inch unbaked pie crust
Topping
1/3 cup sugar
1/3 cup flour
1 teaspoon cinnamon
2 tablespoons butter
Directions
Preheat oven to 400 degrees.
In large bowl, combine sour cream, egg, flour, sugar, cinnamon, salt and vanilla. Beat until smooth.
Stir in apples.
Spoon mixture into unbaked pie crust.
Bake for 15 minutes. Reduce heat to 350 degrees and bake another 15 minutes.
While pie is baking, prepare topping (which you will add to top of pie after it has baked the first 30 minutes).
Combine sugar, flour and cinnamon in a small bowl.
Cut in butter with a fork until it resembles fine cornmeal.
Sprinkle mixture on top of partially baked pie (after it has baked first 30 minutes).
Bake another 30 to 35 minutes or until apples are completely tender.
