Thumbprint Cookies
Ingredients
1 cup butter, softened
1/2 cup brown sugar, firmly packed
2 eggs, separate yolks from the whites
1-1/2 teaspoons vanilla
1/4 teaspoon salt
2 cups flour
1 cup finely chopped nuts (optional)
Your favorite flavor of preserves or jam (I use Smucker's)
Directions
Preheat oven to 350 degrees.
Cream together butter, sugar, egg yolks, vanilla and salt in large bowl. Beat until well combined. Fold in flour and mix well. Shape dough into 1-inch balls.
Beat egg whites with fork, in small dish, until foamy. Dip each ball of dough into egg white; roll in chopped nuts. Place on cookie sheets; using your thumb or the back of a spoon, make an indention in each ball. (If you don't want to use the nuts, just skip the egg whites and place balls directly on cookie sheets, indenting centers.)
Bake for 8 minutes. Remove and fill centers with your favorite Smucker's Jam or Preserves. Return to oven and bake an additional 6-8 minutes, or until lightly browned. Remove and cool on wire rack.
Makes 36 cookies.
