Tuna-Egg Salad
Ingredients
4 hard-cooked eggs (divided)
1 (9-1/4-ounce) can tuna, drained and flaked
1 cup diced celery
1/4 cup finely chopped green onions (tops and bottoms)
1/4 cup sweet pickle relish
1/4 cup mayonnaise
1/4 teaspoon lemon-pepper seasoning
1/8 teaspoon salt
3 drops of Tabasco sauce (or your favorite hot sauce)
Directions
Coarsely chop 3 hard-cooked eggs. Combine eggs and remaining ingredients (except reserved egg); stir well.
Cover and chill.
Slice remaining egg. Garnish salad with egg slices.
Sandy's Note: Delicious in a tomato, on lettuce leaves, or in a sandwich. (If to be used in a sandwich, all ingredients, including egs, should be finely diced)
